Air can contain water vapour. The warmer the air, the more water vapour it contains.
So the warm air in your house has water vapour (from you and your cooking, etc). But when it hits the cold window, the air cools and cannot hold the water vapour any more, so it dumps it on the window.

When something real hot, means a really cold window, lots of little drops of water can form. When I cook, it heats the air and the hot air reaches the cold window. The hot air cools and this means there is water droplets forming.
