Animal breeders work with genetic differences between animals within the same species, so breeding chickens with other chickens, pigs with other pigs and so on.

Only very rarely can closely related species breed, and get fertile offspring, and that is an entirely different (but very interesting) research topic in evolutionary biology, why and how that happens. 🙂
