Popcorn kernels have a hard outer shell and a starchy inside which also contains oil and water. When the corn is heated, the water will try to evaporate and escape but it can’t get through the hard outer shell so pressure builds up and when a temperature of 180 degrees is reached (mega hot!) the corn kernel ‘pops’ and turns inside out, leaving us with popcorn! 🙂
