PhD actually stands for Doctor of Philosophy! It comes from the historical way of describing the subjects, where what we think of as sciences, humanities and arts now were all part of the same school. Science was “natural philosophy”, and Doctor was a title given to anyone that had passed the highest level in a university. You can get a PhD in loads of subjects, not just science – basically any subject that you can study at university.
