@Katherine – Hi! To be honest, I am a very big fan of liquid nitrogen. This is the liquid form of nitrogen gas and its temperature is almost -200 degrees Celsius. We use it for many different experiments and it is always great to see how quickly everything freezes. In terms of fascinating experiments, i might be a bit biased but i really like Nuclear Magnetic Resonance (NMR) experiments and X-ray crystallography! Both of these techniques are great for finding protein structures and work in very different and interesting ways.
