      Hi gavinburt,

      Most fruit goes brown when you cut it open, as an enzyme (a chemical in the fruit) begins to react with oxygen in the air. Acid can slow down or stop this reaction – so adding an acidic liquid like lemon juice to slices of apple (for instance) actually stops them changing colour.

      This is useful to know if you don’t like eating manky brown sliced of apple!
