      Because there’s a tiny amount of water in the corn seed. When this is heated (by microwaving it or putting it in a pan over the hob), the water turns into steam. Steam occupies more space than water, so it builds up pressure inside the seed. When this pressure reaches a critical point, the seed POPs open!
