Different surfactants have different properties – one might be better at stabilising the end product, another may be a more effective cleaner against certain residues as opposed to another, etc. A mixture is used to balance stability against the intended use of the product, and you have to make a compromise somewhere! But without using more than one in the first place you won’t have either a stable product or one that is effective against a range problems (e.g. you want a laundry detergent that can clean almost everything off your clothes)
