I mostly make ‘normal’ cakes, such as sponge cakes or birthday cakes, or traybakes like caramel shortbread or Scottish tablet. Basically, sweet things that you can eat with a coffee but aren’t too hard.
I’d love to make more fancy stuff like pastries but I’m not there yet. Maybe one day!
Bread. Over Lockdown I bought a massive sack of white flour, and over 30 or so “bakes” I worked out what I thought was absolutely the best recipe for white vegan bread. Basically it’s white flour, maple syrup for sweetness, some olive oil, a sprinkling of sea salt and a blob of miso, mix, prove and bake.
