  When seeds are sown in soil, it germinates and grows roots and leaves. So the seed doesn’t actually disappear, they just grew into plants.

As Ilma mentioned, the seed contains the start of the root and shoot within it, so these burst out of it with only the seed case surviving which is then broken down by insects and worms.
