Great question! I think everyone has their own interests and so the most interesting thing differs for everyone! I often also find that the next thing I am working on is always the most interesting!
Again a great question, and very individual. Some people love to discover things which are new, so finding out why things work, e.g. how does a seed know when to start growing, while other like to have a direct impact, e.g. discovering how to make golden rice which increases vitamin A in rice and helps prevent blindness in children.
In general, I think most people want to discover something new, that explains why or how a process happens. For me, looking at how photosynthesis takes place in a leaf and how a plant utilises this process to make its own food is highly interesting.
The most interesting thing to discover is whatever you find most interesting! If you decide to pursue a career in science, early on you’ll do lots of courses and probably exams, course work etc. If you’re working on topics that you find interesting, you’ll find that it makes it much easier to learn and do well in your exams.
