I’ve seen a few really interesting corals. In Tobago, I saw a really big brain coral – apparently it’s the largest one in the world (you can probably find it on Google). Other cool ones are Plerogyra (looks a bit like bubbles with fingerprints), Fungia (known as mushroom corals, which aren’t attached to the reef, they kind of just sit there, loose) and also a soft coral called Pulsing Xenia (which looks like a bunch of little flowers that keep opening and closing).
For fish, I’ve seen a few of those too. Manta rays are always great to see gliding about near reefs. Also spadefish (called that because they are shaped a bit like the spades on playing cards) – they sometimes follow divers around, and the young ones look just like dead leaves so they are disguised from predators. Boxfish are cool – they’re like little swimming cubes. A very strange fish (which I haven’t seen) is called a pearlfish – they don’t look that strange, but they live inside the bum of a sea cucumber!!
I could keep going, but those are a few you can look up and see to begin with if you like.
