      When you heat sodium bicarbonate and sugar it starts a reaction where sodium bicarbonate breaks down into sodium carbonate, water and carbon dioxide gas while the sugar in oxygen produces water and carbon dioxide gas. The rising tube of black ash is carbonate with black carbon particles.

      The black particles that you see are the same as the ones that come out of factories and vehicles. It is called soot.
