      Fat is a compound by itself. It is made up of elements such as carbon, oxygen, hydrogen . The different forms of fat such have different properties because they have different number of carbon atoms in their backbone structure (even though they have the same elements)! for example fat present in dry fuits is very good for health and is sometimes recommended by doctors. However, fat in fried things and chips is not good for health.
