Admin days are important to sort out your data. Science is all about thinking “what does this tell me?”
Getting your results organised helps you to plan the step. By making your results clear, you help the next person to work on the project.
It feels good to complete a report. It’s an achievement rather than a chore, IMHO

I didn’t much like the admin associated to managing people so don’t anymore.
When I’ve digging into the data to understand what my experiments are telling me I’m fascinated and often more than my hours as I forget the clock.

Not really. As long as there is a mix of different activities, admin is fine. When I finished my studies I spent another 10 years doing a lot of lab-based research. It was a nice change then to take on an office job. What I like is: a bit of research, a bit of my time spent on thinking about solving problems or preparing new teaching material. Some admin can even be welcome because you don’t have to think too much.
I don’t have specific days when I work in the lab, or do admin. I tend to intersperse research, teaching and administration through the day. Some days I do more research than the others and those are the most rewarding in some respects. However, the opportunity to teach the next generation of scientists also proves very rewarding. To be honest, administration just needs to be done.
