The orange flame on the Bunsen is nice and pretty, gives a nice colour, and is easy to see. It’s not too good at heating things up though (it’s still hot of course, don’t put your fingers in it).
The blue flame happens with you open up the air-intake at the bottom, and allow some oxygen to the middle of the flame. You can get a much hotter, blue straight flame. This is usually better to do science with, and is better to heat things up. But it’s a little more difficult to see, and doesn’t flicker as attractively as the orange flame.
