I’m always looking for new dishes to cook but one of my favourites at the moment is seafood baked in paper – mussels, prawns, squid, anchovies with chillies, tomatoes, spring onions, garlic, seasoning and a couple of slices of lemon – all wrapped in greaseproof paper and baked in the oven (or air fryer!), served with sourdough bread. Really quick and easy to do, perfect after a long day in the labs!
