I’m really interested in enzymes and how they have evolved to catalyse reactions (convert one chemical into another). Some enzymes can be very specific and only accept one out of many similar chemicals. They also catalyse reactions at different rates (some fast, some slow). One example is alcohol, where different versions of an enzyme (in different people) break down alcohol faster or slower, which affects how bad someone’s hangover is!
