Well firstly there is a physical change, they change in size! The head and brain both grow until we are teenagers.

Secondly, different regions of the brain are responsible for different things. For example we have a part that helps us walk, a part that helps with reading and maths, a part that helps with language and so on. As we grow older and learn more things (especially in our childhood we learn a lot of things!) more connections form between different parts of the brain. So the older you get and the more you learn things, the more connections you form!
