Good question.
Not my area although I have trained as a hypnotherapist. I have read about it being a way of sorting memories out and almost like a filing system putting things in order and storing memories. We have lots of dreams, but don’t always remember them.
I found this , which has a number of suggestions. Looks like the scientists aren’t sure either, which is why science is so interesting. I usually have interesting dreams that I remember when I’ve a lot on my mind or am worried about something. When do you remember dreams?
