In a way this is already seen with medicines but rather that the human body becoming immune to the effects of a drug, it can be seen with antibiotics where the bacteria which have caused an infection in a patient can become immune to its actions. Also if people have to go on drugs for a long time, sometimes the effect of the drug can be seen to wear off. Many people have different sensitivities to drugs based on their genetic makeup so I would have thought it would be very possible that over thousands of years the human body could evolve to become immune to certain drugs.
      hope this helps
