The vertical movement is to do with how much hot air you let inside the balloon, the more hot air, the less dense it is from the surrounding cold air and the higher it goes. In terms of flight path, I don’t think they can really control it because it depends on air currents. people only usually use hot air balloons on days that there isn’t a strong wind. I guess they can ascend/descend and try to get into different air currents.
