love them. THey contain an amazing enzyme called bromelain that breaks down protein.
Why is that cool? – Put a small piece of pineapple in a little dish of water with a strip of beef in it. Do the same without the pineapple (your control, we are scientist after all). Leave it overnight.
Thats why you can’t make pineapple jelly using gelatine (a protein)…unless you disable the enzyme first with heating, or ‘inhibit’ it (block it from working) by adding chilli.
Why is it not cool? If your job is picking pineapples…we are made of protein too and so the juice starts to break us down too!
